Product Description

Organically produced, using covercrops and sheep manure. Organic labelling next year. We harvest green olives early from the tree by hand, storing the olives in crates for 2 days before milling.
We extract the oil in a modern mill: vertical threshers and a two-phase decanter. The oil is unfiltered, and gravity decanted before bottling. Full of character with a hint of spiciness and an aroma of cut grass and wildflowers.
